Cauliflower Rice

After living in Costa Rica for three months, rice is not a grain that I am running to the kitchen to eat. Instead I made this recipe out of cauliflower to have a rice consistency but it is also pack with nutrients with a great coconut flavor.

Ingredients:

  • 1 head cauliflower
  • 2 Tbsp coconut oil
  • 1/2 cup coconut milk
  • 1/4 cup fresh cilantro (chopped)
  • 1 Tbsp fresh lime juice
  • 1/4 cup coconut flakes
  • 1/2 tsp sea salt

Step 2: Place the small pieces of cauliflower in a food processor with a grating attachment. Another option is to use a cheese grater to create the ‘rice grains’ out of the cauliflower

Step 3: Head olive oil in a large skillet on medium-high heat and add the grated cauliflower. After 4 minutes, add the coconut milk, cilantro, lime juice, and salt

Step 4: Mix everything together and cook for 10 more minutes until the cauliflower is tender like rice. Served topped with fresh cilantro sprinkled with coconut flakes
