Watermelon and Kale salad

Summer Watermelon and Kale salad

• 1 tsp apple cider vinegar
• 1 T fresh squeezed lemon juice
• 1/4 cup raw unfiltered honey
• 1 T filtered water
• 1/8 cup coconut oil
• salt and pepper (to taste)
• 4 cups kale leaves, stems removed and roughly chopped
• 4 cups watermelon, cubed
• ¼ cup raspberries
• 1/2 cup walnuts
• 1/4 cup fresh basil
1. In a bowl, whisk together apple cider vinegar, lemon juice, honey and water. Add the coconut oil and whisk until well blended
2. Separate the stems of Kale from the leaves and mix in a bowl with watermelon, raspberries, walnuts and basil
3. Drizzle with vinaigrette
4. Serve fresh on a hot summer day
