Roasted Beets ‘n’ Sweet Potatoes

10429839_10155195661795177_4506302229306566329_nWith it being so cold outside, I needed some roasted vegetables to warm up with. These beets and sweet potatoes were so tasty and colorful, it brightened my day by just eating them! Enjoy the recipe:


  • 6 colorful beets, peeled and cut into chunks
  • 2 Tbsp. Olive oil, divided
  • 1 teaspoon garlic salt
  • 1 medium sweet potato, peeled and cut into chunks


  1.  Preheat oven to 400 degrees F
  2. In a bowl, toss the beets and 1 Tbsp olive oil to coat and line in a single layer on a baking sheet
  3. Bake beets for 15 minutes alone as they take a little longer than the potatoes do
  4. After 15 minutes, combine remaining oil and sweet potatoes and add to the to the mix
  5. Bake for 20 more minutes or until all vegetables are tender
